At The Black Pig butchers shop you can take part in very small group courses in lamb/pork butchery, dry curing and artisanal sausage making.
The Black Pig is a small and unique butchers shop in Deal, Kent. We use only locally sourced and free range meat supplied from nearby Kent farms and slaughtered locally because animal welfare and supporting local producers are two very important issues to us.
Our stock includes Aberdeen angus beef, Salt marsh lamb, rare breed Oxford sandy and black pork, free range ducks and chickens and wild game.
In the shop, as well as the butchery, we pride ourselves on a large range of hand made sausages - some gluten free. We make a mixture of traditional recipes such as cumberland, pork and leek and pork, apple and sage as well as recipes such as toulouse, merguez and pork, roasted red onions, walnuts and fresh herbs. We often use seasonal and foraged ingredients in our sausages such as wild fennel and wild garlic from our coastline as well as locally brewed cider and ale. We also dry cure bacon, gammons and salt beef on site as well in a range of hand made cures using salt dark sugar and herbs and spices.
On our courses we aim to impart as much of our knowledge and experience as we can and give you a very fun and hands on experience.
The courses run in the evenings and on Sundays and are available for adults only due to health and safety issues with knives and machinery.
Courses last approximately 3 hours and are run for just 2 people at a time to allow for maximum involvement and hands on experience.
All equipment needed such as aprons, knives and cups of tea is provided.
